Getting your family to eat the recommended daily serving of vegetables is easy if you have a garden and grow your own during the summer! Here’s several of my favorite summer vegetable recipes that I like to make and serve the family and grandchildren!
Even if you don’t grow vegetables, it’s always fun to take the kids and stop of at your local farmer’s market, food co-op or roadside stand to pick up some fresh corn for the grill, zucchini, squash, peppers or cucumbers to put together a quick salad or add to a pocket sandwich! Plus, you save money when you plant a garden, or buy local and support small business!
A magnificent way to make zucchini and use up all that extra green squash is to try this easy mock crab cake recipe! With a little Bay Seasoning, it tastes just like authentic New England or Maryland Crab Cakes seafood!
