During Lent I like to serve my family meatless meals. One of our favorites is grilled fish fillets that I served with an easy Rice Pilaf recipe using Minute 100% Whole Grain Brown Rice.

Instead of French Fries, I put together an easy recipe for Rice Pilaf using Minute 100% Whole Grain Brown Rice. I had the green peppers, yellow peppers, onions and scallions already on hand in the freezer. That’s a good thing about freezer meals. When the produce is on sale, I buy it, chop it ahead and freeze for when I need something quick.
The nice thing about Minute Rice is that you can use portion control. Since I was only cooking for two, I made enough just for us. No rice steamer needed!
If you do have any leftover, use some leftover rotisserie chicken from an earlier meal in the week and add to this rice pilaf for lunch, or as a side dish on another night.
Quick Brown Rice and Pepper Pilaf Recipe
2 tbsp. olive oil
1 small onion, chopped
1/4 cup chopped scallions
1 can (14 1/2 oz.) chicken broth
2 cups MINUTE® Brown Rice, uncooked
2 tbsp. chopped fresh parsley
Heat oil in medium saucepan on medium heat. Add onions and peppers; cook 3 minutes or until crisp-tender, stirring occasionally.
Add scallions; cook 3 minutes or until scallions are tender, stirring occasionally. Add broth; stir. Bring to boil.
Stir in rice; cover. Reduce heat to medium-low; simmer 5 minutes. Remove from heat; let stand 5 min. Add parsley; mix lightly.
Makes 8 servings.
