Easy Whole Grain Brown Rice Pilaf Recipe | Minute Rice | Meals for Lent

During Lent I like to serve my family meatless meals. One of our favorites is grilled fish fillets that I served with an easy Rice Pilaf recipe using Minute 100% Whole Grain Brown Rice.

Whether you’re cooking for two or serving a crowd, Minute Rice is a nice alternative to a traditional fish and chips dinner during Lent.

You can have great-tasting fluffy white rice in just 5 minutes with Minute White Rice.  It’s easy to prepare and is the foundation to any healthy meal.

Minute Rice has provided healthy meal solutions for families since 1949.

If you like the nutty, rich flavor of brown rice, Minute 100% Whole Grain Brown Rice is a delicious, healthy option, as it has the same nutritional values as regular long cooking brown rice, but is ready in just 10 minutes – just 1/4 the time of regular brown rice.  Both Minute Brown and White Rice are gluten free too!

Living in New England, we have many local fish markets where I can stop by to pick up fresh haddock, cod, salmon, shrimp, or swordfish.

Tonight I was in a hurry to get dinner on the table for the hubby and myself, and stopped at the grocery store and picked up several packages of frozen Alaska Pollock fish fillets from the Gloucester Fisherman. They were gluten free and only 80 calories.

Instead of French Fries, I put together an easy recipe for Rice Pilaf using Minute 100% Whole Grain Brown Rice.  I had the green peppers, yellow peppers, onions and scallions already on hand in the freezer.  That’s a good thing about freezer meals.  When the produce is on sale, I buy it, chop it ahead and freeze for when I need something quick.

The nice thing about Minute Rice is that you can use portion control.  Since I was only cooking for two, I made enough just for us.  No rice steamer needed!

If you do have any leftover, use some leftover rotisserie chicken from an earlier meal in the week and add to this rice pilaf for lunch, or as a side dish on another night.

Quick Brown Rice and Pepper Pilaf Recipe

2 tbsp. olive oil
1 small onion, chopped
1/4 cup chopped scallions

1 1/2 cups chopped green pepper and yellow pepper
1 can (14 1/2 oz.) chicken broth
2 cups MINUTE® Brown Rice, uncooked
2 tbsp. chopped fresh parsley
Heat oil in medium saucepan on medium heat. Add onions and peppers; cook 3 minutes or until crisp-tender, stirring occasionally.

Add scallions; cook 3 minutes or until scallions are tender, stirring occasionally. Add broth; stir. Bring to boil.

Stir in rice; cover. Reduce heat to medium-low; simmer 5 minutes. Remove from heat; let stand 5 min. Add parsley; mix lightly.

Makes 8 servings.

Minute® Rice is so quick and easy to prepare and is great pantry staple. When meal time seems like a hassle, Minute® Rice is a go-to ingredient your whole family will love and allows you to have more quality time doing what your want with your loved ones.

Leftover rotisserie chicken or veggies from a meal earlier in the week? Minute® Rice can easily be paired with some of your leftover ingredients to make a quick, easy and wholesome meal your whole family will love in just a matter of minutes.
